A Rickmansworth baker’s latest cake acts as a tribute to a Hungarian baker who became a refugee, with the proceeds going towards those dealing with the situation in Ukraine.
Hazel Carmichael’s new ‘Henry Cake’ is named in honour of the confectioner Henry Spelter, who fled his home country of Hungary in 1956 due to the Hungarian Rising.
Hazel said: “Henry arrived in Dublin as a refugee and was given a job by my great uncle. Together they reworked his Hungarian Marika recipe to create the Mary Cake – which became a favourite with Dubliners for decades.’
“It is a unique product – a rich chocolate filling on a sponge base, encased in chocolate and topped with a disc of marzipan.
“I have subsequently created a new Henry Cake in memory of Henry Spelter, who passed away last year. It contains a kirsch-soaked black cherry in the centre and has proven to be very popular!”
10 per cent of all of the sales of the Henry and Mary cakes will go towards the Red Cross Ukraine appeal, supporting refugees of today, just as Henry was all those years ago.
