Waste not want not, says chef

A restaurant in Hatch End was fully booked earlier this month when one of the country’s top chefs took it over to raise money for the Harrow Foodbank.

James Holah, currently executive sous chef for Selfridges, and his wife Sarah took over the Steak Restaurant in aid of the Harrow Foodbank raising an impressive £5,500 in the process.

Most of the dishes made on the night were made with food waste and James said that the occasion was a real night to remember.

He said: “It was fantastic and absolutely amazing. Everyone had a great time and there was a real feeling of goodwill in the room. We’re really happy. Justin, the owner of the Steakhouse, gave us the restaurant for free and everybody’s been super generous.”

95 per cent of the dishes on the night came from food waste, a subject that is close to James’ heart.

He explained: “It comes with what I do for a living. I work with food so I am active in the world of food waste and I am trying to stop it and minimise it. There’s something wrong when so much food goes to waste and people can’t feed their families.

“For example, we made the dessert out of broken easter eggs from Selfridges Food Hall. I wanted to take the opportunity to highlight issues we face from food waste. Nearly 40 per cent of food in this country goes to waste before market.”

James said he has been constantly asked when we’re doing the next one.

He added: “The evening was a great success so I have the appetite to do it again. I think we can sell twice as many tickets next time.”
